Oatmeal Energy Cookies

I made these the first time a few months ago, and fell in love. I make them for long weekends when a lot of exercise will be involved, such as the Medtronic weekend in the beginning of October. They freeze well, and last longer if refrigerated because of the bananas. I recommend keeping them cool and heating in a microwave/car dash if you like your chocolate squishy.

Oatmeal Energy Cookies
Ingredients
3 ripe bananas, peeled. Mashed makes things mix faster.
1/3 Cup Applesauce
2 Cups Oatmeal, I use steel cut
1/4 Cup Milk, I use unsweetened almond milk
1/4-1/2 Cup dried fruit, I use dried cherries for anti-inflammatory purposes
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 Cup Chocolate Chips, chopped if preferred
*optional 1/2 Cup Nuts, chopped (add more chips if not using nuts)

Mix everything with a hand-mixer, or a counter top mixer if you want. Roll into 1-2″ balls, place onto greased cookie sheet about 2 inches apart.

Bake at 350 degrees for 15-20 minutes.

I make my cookie balls 2″ round and end up with about 8 cookies.

Both times I have made these, they weren’t stiff cookies, which I am okay with. You will need to modify your ingredients to make stiff cookies if you choose.
